Nasu Agebitashi (Eggplant)

Ma 2363-4 Long eggplant

oil

1 cup Katsuo dashi

2 tbsp Japanese soy sauce

1 tbsp Sugar

cut eggplants and put a notch in that(skin side)

heat the oil on the pan and deep fry eggplant for a few minutes

boil Katsuo dashi and put Japanese soy sauce, sugar in it

when eggplant is cooked, remove from the oil and put it into the pan(boiling katsuo dashi, sou sauce, sugar), and then cook it for a few minutes

serve it into the plate

It is good to eat when it is hot but even if it is cold, you can still enjoy it.

It looks oily because I deep fry eggplant but that taste is not oily oily anymore with Katsuo dashi.
